This easily reached coconut rice side dish has snow peas and green onions for other crunch and flavour.

The ingredient of Coconut Rice

  • 1 tbsp vegetable oil
  • 4 green onions thinly sliced
  • 1 1 2 cups jasmine rice rinsed
  • 1 1 2 cups coconut milk
  • 125g snow peas trimmed thinly sliced

The Instruction of coconut rice

  • heat oil in a large saucepan greater than low heat cook onion for 2 minutes or until softened add rice stir to coat addition heat to medium high heat grow coconut milk and 1 1 2 cups chilly frosty water cover bring to the boil shorten heat to low cook for 15 minutes or until rice is just tender
  • remove from heat go to snow peas stand covered for 5 minutes using a fork separate grains
